One-Bowl Fudgy Gluten-Free Brownies

Chewy-edged, soft-centered gluten-free brownies made in one bowl for quick, reliable weeknight baking.

Ingredients
  

  • cups sugar
  • ¾ cup cocoa powder
  • ½ cup gluten-free all-purpose flour
  • ¼ tsp xanthan gum
  • tsp baking soda
  • ¼ tsp sea salt
  • 1 tbsp cornstarch
  • 2 large cold eggs
  • 4 tbsp melted butter
  • cup avocado or canola oil
  • tsp vanilla extract
  • 2 tbsp cold water

Instructions
 

  • Preheat oven to 325°F. Line a 9×9” metal baking pan with parchment.
  • In a large bowl, whisk together sugar, cocoa, flour, xanthan gum, baking soda, salt, and cornstarch.
  • Make a well in the center. Crack in the eggs, then add melted butter, oil, vanilla, and water. Stir until smooth.
  • Pour into the pan and smooth the top.
  • Bake 22–25 minutes, until the top is set and a toothpick comes out with moist crumbs.
  • Cool completely in the pan before slicing.

Notes

Flaky salt on top before baking makes them extra gourmet. For dairy-free, substitute the butter with melted coconut oil. You can halve the recipe and bake in a loaf pan for a small batch.
