No-Bake Peanut Butter Bars with Almond Flour

These naturally sweetened, no-bake peanut butter bars come together fast and set beautifully in the fridge, offering a cool, chocolatey treat perfect for hot weather or lunchboxes.

Ingredients
  

For the dough

  • 1 cup natural peanut butter crunchy or creamy
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/4 cups super-fine blanched almond flour
  • 1/4 cup mini chocolate chips
  • 1/4 teaspoon fine sea salt

For the chocolate topping

  • 4 oz bittersweet chocolate or chips, about 70% dark
  • 2 tablespoons creamy peanut butter
  • flaky sea salt optional

Instructions
 

  • Line a 9×5 loaf pan with parchment paper and lightly grease it with coconut oil.
  • In a medium bowl, stir together peanut butter, maple syrup, and vanilla until smooth.
  • Add almond flour, chocolate chips, and salt. Mix until fully combined — you may need to use your hands.
  • Press the dough firmly and evenly into the pan. Chill while you melt the topping.
  • In a microwave-safe bowl, combine chocolate and peanut butter. Microwave in 30-second intervals, stirring between each, until smooth.
  • Pour the chocolate topping over the base layer and spread evenly.
  • Sprinkle with extra chocolate chips and flaky sea salt, if desired.
  • Chill for 2 hours until firm. Slice into bars or squares.

Notes

Nut tip: You can use almond butter or sunflower butter if peanut’s off the table — just watch the oil separation. Stir well before using. Storage Note: These keep for 2 weeks in the fridge or 3 months in the freezer.
