Gluten-Free Rice Krispies Treats

Classic gooey gluten-free crispy rice treats made with marshmallows and butter.

  • gluten-free crispy rice cereal
  • 4 tbsp salted butter
  • 5 cups mini marshmallows melted portion
  • 1 cup mini marshmallows extra for pockets
  • 1 tsp vanilla extract optional

Instructions
 

  • Line a 9×9 pan with foil and spray lightly.
  • Melt 4 tbsp butter over medium-low heat.
  • Stir in 5 cups mini marshmallows until melted, stirring constantly.
  • Remove from heat and stir in vanilla and 1 cup extra marshmallows.
  • Fold in crispy rice cereal until fully coated.
  • Press the mixture gently into the pan.
  • Cool completely before slicing into squares.

Notes

Use certified gluten-free crispy rice cereal. Check marshmallow labels for additives. Add vanilla for extra flavor. Store airtight for 2 days. Do not refrigerate. For dairy-free, use vegan butter and plant-based marshmallows. Great for parties when cut into small squares or shapes.
