Ingredients
  

  • Very ripe bananas (mashed)
  • 2-3 large
  • Baking soda
  • 1 teaspoon
  • Unsalted butter
  • 1/3 cup melted
  • Granulated sugar
  • 3/4 cup
  • Salt
  • Pinch
  • Large eggs
  • 2 beaten
  • Vanilla extract
  • 1 teaspoon
  • Gluten-free flour blend
  • 1 1/2 cups
  • Xanthan gum
  • 1/4 teaspoon

Instructions
 

  • Preheat oven to 350°F (177°C)
  • Prepare 4x8 inch loaf pan with non-stick spray
  • Mash 2-3 overripe bananas until completely smooth
  • Stir in baking soda
  • Add melted butter and mix thoroughly until emulsified
  • Add 3/4 cup sugar and pinch of salt to banana mixture
  • Beat in 2 whole eggs until fully incorporated
  • Mix in 1 teaspoon vanilla extract
  • Combine gluten-free flour blend and xanthan gum (if using) and fold into wet ingredients until just incorporated
  • Pour batter into prepared loaf pan and smooth the top
  • Bake for 50-60 minutes until toothpick comes out clean
  • Cool for 10-15 minutes before slicing

Notes

Use bananas with blackened skins for sweetness and natural leavening
Substitute coconut oil for butter to make vegan
Include xanthan gum only if not already in flour blend
Store in airtight container at room temperature for up to 2 days
