Easy Coconut Date Cake (Only 5 Ingredients!)

Flourless coconut date cake made with just five ingredients for a chewy, lightly sweet dessert or snack.

Cake

  • 2 eggs
  • 4 oz cream cheese room temperature
  • 1/2 cup pitted dates soft or soaked
  • 1 1/4 cups unsweetened shredded coconut
  • 1 tsp baking powder
  • mini chocolate chips optional
  • vanilla extract optional

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line a 6-inch springform pan with parchment paper.
  • In a mini food processor or blender, combine cream cheese, eggs, and dates and blend until smooth.
  • Pour the mixture into a bowl and mix in the shredded coconut and baking powder until evenly combined.
  • Add vanilla or mini chocolate chips if desired and gently fold into the batter.
  • Pour the batter into the prepared pan and bake for 25–30 minutes, or until golden and a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling.

Notes

Optional add-ins: mini chocolate chips and vanilla extract. Rachel’s Tip: If your dates are dry, soak them in warm water for 10 minutes first, or microwave with a splash of water for 30 seconds to soften; it makes a big difference in texture.
