Ingredients
  

  • 3/4 cup macadamias
  • 7 pitted Medjool dates
  • 1/4 cup desiccated coconut
  • 1/3 cup maple syrup
  • 1/3 cup cacao powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • Coconut oil (for chocolate layer)

Instructions
 

  • Blend macadamias, dates, and coconut until crumbs form
  • Press 1 tsp mixture into 24 mini muffin tins
  • Freeze 15 minutes
  • Blend 1/2 cup macadamias, 7 dates, maple syrup, vanilla, and salt until smooth
  • Spoon caramel onto bases, freeze 45 minutes
  • Melt coconut oil, whisk in maple syrup and cacao powder
  • Spread 1 tsp chocolate glaze over caramel, freeze 3-4 hours to set

Notes

Use mini muffin tins for precise portioning
Chill mixing bowl before melting chocolate for easier handling
Substitute dates with 50g dried goji berries for alternate sweetness
Replace macadamias with almonds if desired
