Almond Flour Pumpkin Blondies (Maple-Sweetened)

Soft, gently sweet pumpkin blondies made with almond flour and maple syrup for a warm, holiday-inspired treat.

Ingredients
  

  • 1 1/2 cups almond flour
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup pumpkin puree not pie filling
  • 1/4 cup melted coconut oil or butter
  • 1/3 cup pure maple syrup
  • 1 egg or flax egg
  • 1 tsp vanilla extract
  • 1/4 cup dark chocolate chips

Instructions
 

  • Preheat oven to 350°F. Line an 8×8 pan with parchment.
  • Whisk dry ingredients in one bowl.
  • In another bowl, mix pumpkin, oil, syrup, egg, and vanilla.
  • Stir wet ingredients into dry ingredients. Fold in chocolate chips.
  • Spread batter into the prepared pan and bake 20–24 minutes, or until the center is just set.
  • Cool completely before slicing.

Notes

Rachel’s Tip: These are even better the next day after chilling — the pumpkin flavor gets deeper and richer.
